You don't need to bake this absolutely delicious and spectacular eggless Saffron Pistachio Cheesecake, so it can be whipped up in 15 minutes or less! Any reason why you aren't giving it a try yet?
 
Ingredients:
Biscuits
Unsalted butter
Pistachios
Sugar
Saffron strands
Milk
Mascarapone cheese
Cream cheese
Vanilla essence
Fresh cream
Rose petals
 
Method:
Place the biscuits, unsalted butter, pistachios and sugar in a mixie jar, and grind them to make a coarse and sticky powder.
Mix saffron strands and warm milk in a separate bowl, and let it rest for an hour.
Place the mascarapone cheese, cream cheese, vanilla essence and soaked saffron in a clean bowl and mix together. There should be no lumps in the mix.
Gradually add fresh cream, pistachios and sugar, and combine well.
Now, place the biscuit base in a martini or wine glass, and pipe out the cheese filling on top.
Top the cheesecake with rose petals, pistachios and saffron strands.
You can serve the cheesecake immediately, or chill it before serving.
