Peas are mainly consumed during winters. This is healthy and rich in iron. Try these yummy tasty and vegetarian recipes made with Matar/ peas.
 
 
1. Matar Nimona :
 
Ingredients : 
 
Ghee - 1 tbsp
Cumin seeds - 1 tbsp
Peas - 2 Cup
Oil - 1/2 Cup
Hing - 1/4 tbsp
Onion - 2
Bay Leaves - 3-4
Ginger-Garlic paste -2 tbsp
Coriander powder - 1tbsp
Red Chilli Powder - 1tbsp
Turmeric - 1/2 tbsp
Tomato Puree - 3 tbsp
Salt 
Water - 2 cups
Coriander Leaves for garnishing.
 
Method : 
 
Heat 1tbsp ghee in a pan
Add Cumin Seeds & let them crackle
Add Peas (Matar) into the oil and fry.
In another wok, heat  ½ cup oil & add Asafoetida (Hing)
Grind the onions well to get 1 cup of paste
Put the onion paste in oil & cook till it becomes golden.
Take another cup of Peas and grind well to make paste
Mix the peas’ paste into onion and cook well.
Add Bay leaves into the wok and mix well
Add Ginger Garlic paste and mix well
Add all the spices (coriander powder, red chilli powder & turmeric powder)
Add tomato puree and salt according to your taste.
Mix all the ingredients well and let it cook for 10-15 minutes.
Add the fried peas and mix well.
Add 2 cups of water (Add more if needed)
Let it cook for few minutes until oil separates.
Garnish it with coriander leaves.
Enjoy Your Matar Nimona with Chappatis
 
2. Bengali Matar Kachori
 
Ingredients :
 
For Dough :
 
Refined Flour (Maida) : 2 cups
Sugar - 2 tbsp
Kala Jeera (Kalonji) - 1tbsp
Salt - 1 tbsp
Oil - 3 tbsp
Warm water - 1 cup
 
For Stuffing:
 
Oil - 1/2 cup
Matar - 1 Cup
Cumin -1/2 tbsp
Ginger - 1 tbsp
Hing - 1/8 tbsp
Green Chilli - 4
Salt 
Coriander Powder - 1/2 tbsp
Red Chilli Powder - 1tbsp.
 
Method :
 
Take a bowl add Maida ,oil, salt, kala jeera and sugar.
Knead the dough with warm water and make a soft dough
Cover the dough and let it rest for 30 minutes.
Heat oil in a pan.
Add Cumin seeds, ginger and hing.
Add chopped green chillies and let them fry.
Add peas and mix it well.
Then add all the spices (coriander powder, salt, red chilli powder).
Mix all the spices with peas and let them cook for a minute.(Don’t Overcook)
Grind the mixture and make into a paste.
Divide the dough into equal parts and make small balls.
Drizzle some oil onto the balls.
Take one ball and make it flat using your hands and add 1 tbsp of matar paste.
Seal the ball again and make it round.
Roll out the dough ball in circle.
Heat the oil in a wok and deep fry the kachori till golden
Repeat the process with other other dough balls too.
Your Bengali Matar Kachori  is ready to serve.
 
 
3. Matar Usal 
 
Ingredients :
 
Oil - 4 tbsp
Peas - 1 cup
Mustard seeds - 1 tbsp
Cumin Seeds - 1 tbsp
Hing - 1/2 tbsp
Garlic - 1 tbsp
Green Chillies - 2 
Turmeric - 1/4 tbsp
Salt 
Sugar - 1/2 tbsp
Coconut Milk - 1 cup
Coriander Leaves 
 
Method : 
 
Heat oil in a pan
Add mustard & cumin Seeds. let them crackle
Add chopped garlic and hing.
Add chopped green chillies and let them fry.
Add Peas (Matar) into the mixture.
Stir fry them on low flame till it softens.
Add turmeric, salt and sugar into the peas and mix well.
Then add Coconut milk and stir well.
Add some coriander leaves
Put on the lid and let it cook for some time.
Your Matar Usal is ready.
Garnish it will cherry tomatoes and coconut milk
 
 
4. Methi Malai Matar 
 
Ingredients :
 
Boiled Peas - 2 cups 
 Water - 1/2 litre
Methi leaves - 2 cup
Salt 
Ghee - 2 tbsp 
Cumin seeds - 1/2 tbsp
Onion- 1 
Cashew Nuts - 10
Green Cardamom - 7 
Tomato - 1
Cumin seeds - 2 tbs
Black pepper - 1 tbsp
Cloves - 1/2 tbsp
Green Cardamom - 7-8
Cinnamon - 1 stick
Milk - 1 cup
Cream - 2 tbsp
Kasuri Methi - 2 tbsp
 
Method :
 
Boil water in a pan and add Methi leaves.
Add salt in the pan and let it boil for few minutes.
Strain the leaves and put into the cold water
Heat ghee in another pan
Add cumin seeds and let it crackle
Grind onion, cashews and cardamom into a paste
Add the paste into the pan and mix it well.
Add chopped tomato into the mixture.
Let it cook till it becomes soft.
Roast all the dried spices (Cumin, black pepper, clove, cardamom,cinnamon stick)
Grind the roasted spices and mix the powder into the mixture.
Mix the mixture in pan and let it cook till the oil separates.
Add the boiled peas and boiled methi into the mixture and mix it well.
Sprinkle some salt over the dish.
Add milk and let it boil.
Add some fresh cream and Let it cook for some time.
Sprinkle some kasuri methi.
Your Methi Malai Matar is ready to serve.
