2 tbsp ginger
2 tbsp green chillies
3 cups besan
1/2 cup rawa
Salt to taste
1/2 tsp turmeric powder
1/4 tsp hing
2 tsp lemon juice
1 tsp soda
1 tsp oil
1/2 tsp mustard seeds
1/2 tsp cumin seeds
3 green chillies
2 sprigs curry leaves
1 tbsp sugar
Place the ginger and green chillies in a mixie jar and grind them to a fine paste.
In a bowl, mix together the besan, rawa, salt, turmeric powder, hing, ginger-chilli paste, lemon juice and water.
Mix well and make sure there are no lumps.
Add the soda and mix very quickly.
Pour the batter into a greased bowl and steam it for 15 minutes, or until the skewer come clean when inserted.
To make the tadka, heat oil in a pan.
Add mustard seeds, cumin seeds, green chillies, curry leaves and saute.
Add water and sugar and mix well until the sugar dissolves.
Cut the steamed Khaman Dhokla and pour the tadka on top before serving.
